Hello ,
The current configuration names to map a field in a full Calendar view are : Date field , URL field , Tooltip field and CSS class field .
Is there perhaps a custom module that adds an extra ability to that configuration screen of a full Calendar view to map more fields and have more field content shown in the output of the view ?

I presume you are talking about Full Calendar Views NG ( https://github.com/backdrop-contrib/fullcalendar_views / https://backdropcms.org/project/fullcalendar_views ) which is the modern version, not the legacy version (https://backdropcms.org/project/fullcalendar)
I have done such a thing. In Views, you can rewrite a field to include values from previous fields in the list, so you simply exclude the earlier field from view and combine the fields into a single field, arranged as you need them.
For clarity, I often do the field that combines the earlier fields as a Global: Custom Text type field.
