As far as I remember Drupal 7 set two Cookies. One for the session and one to keep track if the user has enabled JavaScript.
I can’t find any Cookies / session variables Backdrop CMS sets for guests. Am I missing something?

I just need the info for my GDPR/DSGVO page.

Typically in a basic site, and as far as I know (I may be wrong) Backdrop doesn't store cookies for anonymous users, EXCEPT if you have things that need to persist, for example, if you create a View with an exposed filter and you configure that filter to "Remember the last selection" for anonymous. Then, Backdrop creates and stores a session cookie in the user's browser.
